Lemon Dressing and Marinade

So good for grilling fresh fish!

Ingredients:

1/4 cup of fresh lemon juice
1 tablespoon of grated lemon zest
2 tablespoons of chopped fresh dill weed
1/4 teaspoon of salt
3/4 cup of olive oil
1/2 teaspoon of dill weed

Instructions:

Combine all ingredients in a blender and mix well.  Poor dressing into cruet and chill for at least 1 hour prior to serving.

Use as a great fresh dressing on your salad or as a marinade for chicken and especially fish.

    I’m doing my own update on this recipe I posted. It’s salmon season here in Washington and we have a ton. I made this recipe for a camping trip and it was so INCREDIBLE!

    We made the marinade exactly as the recipe called for and then marinaded the salmon overnight. I just made sure we were the family cooking on the first night. Hubby grilled it and it was just amazing. It’s very light and refreshing, but not boring like many salmon recipes can be.

    Make a double batch and use it for your dressing on salads and marinade some fish with half of it.
