<li class="ingredient">14 fl oz chicken or vegetable stock, heated</li>
<li class="ingredient">2 tbsp fresh basil, chopped</li>
<li class="ingredient">1 oz butter, cut into small pieces</li>
<li class="ingredient">Salt and Pepper</li>

<li class="instruction">Preheat the oven to 350°F.</li>
<li class="instruction">Wash the tomatoes and cut a thin slice off the top of each of them. Take the flesh out and turn them over to drain.</li>
<li class="instruction">In a bowl, add couscous and cold water and let stand until water is absorbed.</li>
<li class="instruction">Heat the sunflower oil in a frying pan and cook the onions for about 3 minutes, add the couscous and cook for another 3 minutes, while constantly stirring.</li>
<li class="instruction">Add 6 fl oz of chicken or vegetable stock and gently simmer while stirring for approximately 5 minutes.</li>
<li class="instruction">Season with salt and pepper.</li>
<li class="instruction">Take the frying pan off the heat and mix in the basil.</li>
<li class="instruction">Let it cool completely.</li>
<li class="instruction">Before filling the tomatoes, gently pat dry, then stuff with the couscous.</li>
<li class="instruction">Arrange them in a buttered baking dish, put the top back on each tomato and add the leftover 8 fl oz stock.</li>
<li class="instruction">Sprinkle with the butter pieces and bake in oven for about 25 minutes.</li>

<p>1/3 cup chopped green onion<br />
1 garlic clove, finely chopped<br />
2 teaspoons unsalted butter<br />
1 1/2 cups water<br />
1/2 teaspoon reduced-sodium chicken bouillon granules<br />
1 cup uncooked semolina pasta<br />
1/4 cup chopped fresh parsley<br />
1 tablespoon chopped fresh basil leaves<br />
1/4 teaspoon pepper<br />
1 medium yellow summer squash, chopped<br />
1 medium tomato, chopped</p>
<p>Directions:</p>
<p>1.  Melt butter in a medium saucepan over medium heat.  Add onions and garlic. Saute stirring often, until onions are translucent.</p>
<p>2.  Add water and bring to a boil.  Once boiling add chicken bouillon. Be sure to stir often so that the bouillon will completely dissolve.</p>
<p>3. When bouillon is dissolved remove pan from stove.  Blend in remaining ingredients. Cover pan and allow to stand for 5-10 minutes.  Make sure all the liquid in the pan is absorbed before serving.  Tossing noodles gently to make sure that all seasonings are spread throughout.</p>
<p>Wonderful with some grilled chicken.</p>

<p>Ingredients:<br />
1 tbsp olive oil<br />
1 medium onion, sliced thinly<br />
4 oz of salami, thinly sliced<br />
2 cans of chopped tomatoes (2x 14oz)<br />
2 tbsp fresh basil, chopped<br />
2 tsp sugar<br />
Salt and pepper to taste<br />
Your favorite pasta</p>
<p>Method:<br />
In a large skillet, heat the oil and cook the onion and salami until the onion is soft and translucent. Stir in the undrained cans of chopped tomatoes, basil and sugar. Simmer the mixture uncovered for about 5 minutes or until the sauce starts to thicken.</p>
<p>Season with salt and pepper.</p>
<p>Combine this very easy to make tomato sauce with your favorite pasta and enjoy with parmesan cheese.  Quick veggie and a side salad and you have a well-rounded meal.</p>

<p>It&#8217;s that time of year, my produce stand is open again!  Peppers and zuchini are back in the diet.  Peppers were getting really expensive at the grocery store so I&#8217;m happy to see them a decent price when we buy local.</p>
<p>Ingredients:<br />
1 lb penne pasta<br />
1 tbsp olive oil<br />
1 medium onion, chopped<br />
2 cloves garlic, crushed<br />
1 lb ground beef<br />
1/2 tsp ground fennel<br />
1 can tomatoes (14oz)<br />
2 red peppers, halved and sliced<br />
1/2 cup water<br />
1 small beef stock cube<br />
1 tsp sugar<br />
2 tbsp red wine vinegar<br />
2 tbsp tomato paste<br />
2 medium zucchini, sliced finely<br />
1 tbsp fresh chives, chopped</p>
<p>Method:<br />
Boil pasta according to packet instructions until just tender and drain.</p>
<p>In a large skillet, heat olive oil and cook onion, garlic, ground beef and fennel until meat is browned all over. Add undrained crushed tomatoes, peppers, water, crumbled stock cube, sugar, vinegar and tomato paste.</p>
<p>Simmer uncovered for about 10 minutes, then add the zucchini, chives and again, simmer uncovered for 10 minutes longer. </p>
<p>Serve beef sauce over the hot pasta and enjoy with helping of freshly grated parmesan cheese.  This is a nice quick meal.</p>

<p>Preheat oven to 350.</p>
<p>1 T extra virgin olive oil<br />
1 12 oz. container cottage cheese<br />
8 ounces ground turkey<br />
1 cup sliced mushrooms<br />
one half small onion, diced<br />
half small green pepper, chopped<br />
2 teaspoons diced garlic<br />
1 8 oz. can tomato sauce<br />
1 1/2 tsp. Italian seasonings<br />
dash salt<br />
1/2 cup shredded mozzarella cheese</p>
<p>Cook whole grain spaghetti according to package directions, drain and set aside. Spray a deep pie plate with olive oil cooking spray. In a medium bowl, beat 1 egg with Parmesan cheese and olive oil. Add noodles to egg mixture, stir gently and place in pie plate.</p>
<p>In a small bowl, mix 1 egg with the cottage cheese. Spread onto the noodles.</p>
<p>Cook ground turkey along with the vegetables until meat is thoroughly browned. Stir in tomato sauce and seasonings. Then spoon on top of noodle/cheese mixture in the pie plate.</p>
<p>Bake 25-30 minutes then stop with mozzarella cheese. Return to oven and bake until cheese melts.</p>
