Fish Chowder

Healthy Fish Chowder
Ingredients:
2 tbsp butter
1 onion, finely chopped
3 potatoes, diced
1 carrot, finely chopped
2 cups water
2 cups skim milk
1 lb fish fillets (fresh or frozen) – bones and skin removed
1 cup corn kernels
1 tsp salt
1/8 tsp freshly ground pepper
Fresh parsley chopped (optional)
Method:
Melt the butter in a large saucepan. Add the carrot, potatoes and onion and cook for about 5 minutes over medium heat. Pour 2 cups of water into the saucepan and simmer covered for about 20 minutes or until the vegetables are almost done cooking.
Stir-Fry Prawn and Chicken

Stir-Fry Prawn & Chicken Noodles
Ingredients:
5oz Singapore or Chow Mein noodles
1 tbsp soy sauce
1 tbsp Chinese rice wine (shaohsing)
1 tsp caster sugar
2 tsp mild curry powder (or hot if you like)
1 ¼ cup Chicken stock
1 tbsp vegetable oil
1 garlic clove, crushed
½ tsp fresh ginger, grated
1 small red chili, seeded and chopped
1 chicken breast, thinly sliced
10oz Cooked medium prawns, peeled, deveined, tails intact
¼ cup Frozen peas
2 spring onions, finely chopped
1 egg, lightly beaten
2 tbs fresh cilantro, chopped
Plus extra cilantro to serve

Add coconut milk and cool whip and it’s automatically decadent!
Chocolate Almond Pudding Treats
Ingredients:
1 can light unsweetened coconut milk
2 1/2 cups skim milk or regular
1 teaspoon almond extract
2 packages sugar-free instant chocolate fudge pudding mix
Cool Whip
Instructions:
Combine skim milk, coconut milk, and almond extract and pudding mix in a bowl. Beat with a wire whisk until thick and smooth. Refrigerate and serve with Cool Whip.
Fajita Salad

Mexican Chicken Salad
Ingredients:
2 skinless and boneless chicken breast halves, cut into strips
1 packet dry fajita seasoning (about 1.27 oz)
1 tbsp vegetable oil
1 tomato, cut into wedges
1 onion, finely chopped
1 package (about 10 oz) of mixed salad greens
½ cup salsa
1 can (11 oz) Mexican-style corn
1 can (15 oz) black beans, rinsed and drained
Method:
Divide fajita seasoning and toss ½ of the mix onto chicken.
In a large skillet, heat the oil over medium heat. Carefully place chicken pieces into hot oil and cook about 12 minutes. Chicken is done when the juices run clear. Take off heat and set aside.

Yummy Oatmeal

Ok, I am not an oatmeal fan. I’ll admit it all day long. The texture of oatmeal just grosses me out! So I have to do added things to it to make it edible for me. This is one of the recipes that I can hang with and enjoy
Breakfast Oats with Cashews
(makes 2 big servings)
Ingredients:
1 cup of instant oats
1 tsp cinnamon
¼ tsp ground cardamom
2 ½ cups milk
2 tbsp butter
Salt
Honey to taste
Handful of unsalted cashews ( give nuts a few good chops to break up, or buy the broken cashew pieces and save money)
Music During Workouts
Music is HUGE for me. I can’t sing to save my life and I can’t play an instrument, but I have a major love for music.
My workouts can really depend on my music as well. Personally I love my heavy metal and dance music for workouts. Mostly it’s about the beat. If I am jogging then dance music is awesome. I can concentrate on that beat and it’s rhythmic. It keeps me striding out to the beat. But my metal is my angry music. I need something at that first mile mark that gets me going. That is my sticky point where I usually have to really talk myself into not being a pansy and get it done. This is when I like my music to get a little heavy at least for a song or two. Depending on the day I may need it the entire jog. lol
Goals on Paper

How long has it been since you’ve written down goals? Business, personal, family, weight loss; do you have the goals solidified?
Today I met with a client that has a big number to lose. She’d love to lose 60 pounds by March. But as she said this goal out loud she’s rolling her eyes and telling me that she knows it’s unrealistic.
She’s right and wrong. If we can’t break the defeated mindset, then yes, it’s unrealistic. But after session I put pen to paper and pulled out my planner.
