Apple Potato Curry Soup

Ingredients:
3 tart apples (such as Gala or Mcintosh), cored
2 large russet potatoes
2 T olive oil or butter
1 T curry powder
2 t onion powder
Cook potatoes in a 350 oven for 30 minutes. Add apples to oven and cook another 30 minutes or until all are very soft. Cool until you can handle them, then scoop out flesh from apples and potatoes into a bowl and mash.
Heat oil or butter in a saucepan and brown curry and onion powders for a few seconds until fragrant. Stir in apple potato mash and 4 cups water. Sprinkle with sea salt and pepper.

Sweet -n- Sour Pork
This is my total downfall. I could live on sweet-n-sour. But alas, that fried up yuck is so bad for me. I was in heaven to find this light version with more veggies. All the places around that serve it seem to be ignoring the veggies anymore and it’s all sauce and deep fried meat. MMMMM, enjoy!
12 oz. boneless pork loin, trimmed of all visible fat
1 can (8 oz.) pineapple chunks in juice
2 Tbsp. Worcestershire sauce
1 tbsp. cornstarch
1/4 tsp. freshly ground black pepper to taste
3 tsp. canola or peanut oil
2 cups broccoli
1 medium carrot, thinly sliced
1 medium onion, cut vertically into 1/2-inch slices
1 garlic clove, chopped
1 tsp. minced fresh ginger
Chickpea and Butternut Squash Stew

Ingredients:
2 T olive oil or butter
1 carrot diced
1 onion diced
1/2 red bell pepper chopped
1 T cumin seeds
1 bay leaf
2 16 oz cans chickpeas, drained
1 32 oz container butternut squash soup
1 1/2 cups couscous
Heat butter or oil in saucepan over medium heat and saute carrot until soft, then add onions and bell pepper and cook several minutes more. Add cumin seeds and bay leaf.
Puree 1 c chickpeas and 1 c squash soup in blender, then add to carrot mixture along with remaining whole chickpeas and soup. Simmer 20 minutes and season with sea salt and black pepper.

The fat content in recipes can be reduced in a variety of ways:
When buying hamburger, look for extra lean hamburger. This type has much less fat than regular hamburger. You can also substitute ground turkey for hamburger. Turkey has a slightly different taste, but it is good and generally costs less than hamburger. Ground turkey is generally very low in fat.
For chicken, white meat contains less fat than dark meat. Try to buy boneless, skinless, chicken breasts. These contain relatively little fat. Turkey can be substituted for chicken. Boneless turkey breast is cheaper than chicken breast, and it is a little lower in fat (although chicken breast is low in fat also).
Spanish Potato Tortilla

Ingredients:
2 T olive oil plus 1 t olive oil
1 lb. fingerling potatoes, thinly sliced
1 onion, thinly sliced
2 t chopped garlic
5 organic eggs
1. Heat 2 T oil in skillet over medium heat. Add potatoes, reduce heat somewhat and cook 5 minutes, stirring occasionally. Add vegetables and cook until onion is translucent. Transfer mixture to a large bowl. Sprinkle with sea salt and pepper.
2. Beat eggs in another bowl and then stir into potato mixture.

There is so much contradictory information out there on the topic of nutrition that I opt not to spend my entire waking life trying to get to the bottom of it all. The jury still seems to be out on a lot of this stuff, and I’m not willing to invest too much in anyone’s opinion.
Doctors, health experts and authors of nutrition books are all better at reworking the research to prove their point than I am. I’m not an epidemiologist or any kind of scientist and there are no letters after my name. I’m just a mom who wants to keep her kids healthy.
Easy Meatballs and Rice

Here is a super easy, quick one dish meatball recipe. The rice and meatballs can be prepared early in the day (when baby is happy LOL!) and then the casserole assembled later.
Easy One Dish Meatball Rice Dinner Recipe
Preheat oven to 350. Feeds 4-6 depending on their ages and appetites.
1 lb. ground beef (you can also use 1/2 ground pork, 1/2 beef)
1/2 tsp. garlic
1/2 tsp. oregano
1/2 tsp. salt
dash pepper
nice squirt (about 2 Tbsp) ketchup
1 egg
Anything else you have on hand: parmesan cheese is good, bread crumbs, leftover oatmeal or rice, a bit of shredded mozzarella, grated carrots or potatoes, a dash of Worcestershire or tamari/soy sauce, etc. Meatballs are very forgiving!

This is a yummy, nutritious recipe and the kids will gobble it up! Keep it on hand for those times when you need to get dinner on the table quickly.
Barbeque Black Beans And Sweet Potato
Serves 4-6, depending on their ages and appetites
Preheat oven to 400.
Ingredients:
3 Sweet potatoes, sliced
Olive oil
Salt
Garlic powder
1 can black beans, drained
1 cup BBQ sauce
Slice the sweet potatoes into 1/4″ slices and mix in a bowl with enough olive oil to cover. Place in a single layer on a baking sheet. Lightly sprinkle with salt. Sprinkle on garlic powder to your liking (I like it heavy!).
